Description

Sweet Strawberry Truffles are a delicious and easy-to-make dessert perfect for any occasion. These bite-sized treats feature the fresh flavor of strawberries blended with creamy white chocolate for a melt-in-your-mouth experience. The no-bake recipe is simple to follow, making it ideal for beginners and seasoned bakers alike.

Start by creating a smooth strawberry purée, which is mixed into a white chocolate and cream base. Once chilled, the mixture is rolled into truffles and coated in melted chocolate for a glossy finish. Customize each truffle with toppings like sprinkles, crushed nuts, or freeze-dried strawberries for added texture and flavor.

Ingredients

Scale
  • 1 cup fresh strawberries, hulled and puréed
  • 1 cup white chocolate chips
  • 1/2 cup heavy cream
  • 1/4 teaspoon vanilla extract
  • 2 cups powdered sugar
  • 1 cup milk or dark chocolate (for coating)
  • Optional: sprinkles, crushed freeze-dried strawberries, or shredded coconut for garnish

Instructions

  • In a small saucepan, simmer the puréed strawberries over medium heat until reduced by half, about 8-10 minutes. Let cool.
  • In a microwave-safe bowl, combine white chocolate chips and heavy cream. Microwave in 15-second intervals, stirring between each, until melted and smooth.
  • Stir in the reduced strawberry purée, vanilla extract, and powdered sugar until a smooth dough forms. Chill the mixture in the refrigerator for 1-2 hours.
  • Scoop tablespoon-sized portions and roll into balls. Place on a parchment-lined tray and refrigerate for 30 minutes.
  • Melt milk or dark chocolate in a microwave-safe bowl. Using a fork, dip each truffle into the melted chocolate, letting the excess drip off. Place back on the tray.
  • Add sprinkles, freeze-dried strawberries, or shredded coconut as garnish before the coating sets.
  • Chill the truffles for at least 1 hour to set completely.

Notes

  • Use fresh, ripe strawberries for the best flavor.
  • For a smoother coating, temper the chocolate for dipping.
  • Store truffles in an airtight container in the refrigerator for up to one week.
