Description

Crispy, golden-brown filo rolls stuffed with creamy, tangy feta and baked to perfection—no deep-frying needed! These oven-fried feta rolls are drizzled with a sweet and spicy chili honey for the perfect balance of crunch, creaminess, heat, and sweetness. Ingredients

  • 6 sheets filo pastry
  • 7 oz (200g) feta cheese, crumbled
  • ¼ cup ricotta cheese (for extra creaminess)
  • 1 tsp dried oregano (or thyme)
  • Freshly ground black pepper, to taste
  • 3 tbsp olive oil or melted butter (for brushing)

For the Chili Honey:

  • ¼ cup honey
  • ½ tsp red chili flakes (adjust to taste)
  • ½ tsp lemon juice (for balance)

Optional Garnishes:

  • Sesame seeds
  • Chopped fresh parsley
  • Extra chili flakes for extra heat

Instructions

  • Preheat & Prep:
    Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

  • Make the Filling:
    In a small bowl, mix crumbled feta, ricotta, oregano, and black pepper. The ricotta makes it extra creamy, but you can leave it out for a firmer filling.

  • Assemble the Rolls:

    • Lay a sheet of filo on a clean surface and brush lightly with olive oil or melted butter.
    • Place about 2 tablespoons of the feta mixture at one end.
    • Fold the sides inward and roll tightly like a spring roll.
    • Place seam-side down on the baking sheet and repeat with remaining sheets.
  • Bake Until Golden:
    Brush the tops with more oil/butter and bake for 18-22 minutes or until crisp and golden brown.

  • Make the Chili Honey:
    While the rolls bake, heat the honey and chili flakes in a small saucepan over low heat for about 2 minutes, just until warm. Stir in the lemon juice.

  • Drizzle & Serve:
    Let the rolls cool slightly, then drizzle with warm chili honey. Sprinkle with sesame seeds or parsley if using. Enjoy immediately!

Notes

  • Crispier Rolls? Bake at 400°F (200°C) for 15 minutes for an extra crunch!
  • No ricotta? Just use feta—your rolls will be tangier but still delicious.
  • Want a milder heat? Reduce the chili flakes or swap for sweet paprika.
