Ingredients
- 6 sheets filo pastry
- 7 oz (200g) feta cheese, crumbled
- ¼ cup ricotta cheese (for extra creaminess)
- 1 tsp dried oregano (or thyme)
- Freshly ground black pepper, to taste
- 3 tbsp olive oil or melted butter (for brushing)
For the Chili Honey:
- ¼ cup honey
- ½ tsp red chili flakes (adjust to taste)
- ½ tsp lemon juice (for balance)
Optional Garnishes:
- Sesame seeds
- Chopped fresh parsley
- Extra chili flakes for extra heat

Preheat & Prep:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. -
Make the Filling:
In a small bowl, mix crumbled feta, ricotta, oregano, and black pepper. The ricotta makes it extra creamy, but you can leave it out for a firmer filling. -
Assemble the Rolls:
- Lay a sheet of filo on a clean surface and brush lightly with olive oil or melted butter.
- Place about 2 tablespoons of the feta mixture at one end.
- Fold the sides inward and roll tightly like a spring roll.
- Place seam-side down on the baking sheet and repeat with remaining sheets.

Bake Until Golden:
Brush the tops with more oil/butter and bake for 18-22 minutes or until crisp and golden brown. -
Make the Chili Honey:
While the rolls bake, heat the honey and chili flakes in a small saucepan over low heat for about 2 minutes, just until warm. Stir in the lemon juice. -
Drizzle & Serve:
Let the rolls cool slightly, then drizzle with warm chili honey. Sprinkle with sesame seeds or parsley if using. Enjoy immediately!
Notes
- Crispier Rolls? Bake at 400°F (200°C) for 15 minutes for an extra crunch!
- No ricotta? Just use feta—your rolls will be tangier but still delicious.
- Want a milder heat? Reduce the chili flakes or swap for sweet paprika.
