  • 3 cloves garlic, minced

  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken thighs with salt, pepper, garlic powder, and smoked paprika.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear chicken skin-side down for 5 minutes, then flip and cook for another 3 minutes. Remove from pan and set aside.
  4. In the same skillet, melt butter and sauté garlic for 30 seconds until fragrant.
  5. Stir in orzo and toast for 1-2 minutes.
  6. Pour in chicken broth, lemon juice, lemon zest, Italian seasoning, and red pepper flakes. Stir to combine.
  7. Nestle the seared chicken thighs back into the skillet.
  8. Reduce heat to medium-low, cover, and simmer for 15-20 minutes, or until the orzo is tender and the chicken is cooked through (internal temp 165°F).
  9. Stir in Parmesan cheese and garnish with fresh parsley.
  10. Serve hot with extra lemon wedges on the side.
