- 8 oz cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon lemon juice
- ½ cup heavy whipping cream
- 1 cup fresh blueberries
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 10×15-inch jelly roll pan with parchment paper and light greasing.
- Beat the eggs and sugar together until pale and thick, then stir in lemon zest and vanilla extract.
- Whisk together flour, baking powder, and salt, then gently fold into the egg mixture.
- Pour the batter into the prepared pan and bake for 10–12 minutes until the cake springs back when touched.
- Dust a clean kitchen towel with powdered sugar, turn the baked cake onto it, peel off the parchment, and roll it up while warm. Let it cool completely.
- Beat cream cheese, powdered sugar, and lemon juice until smooth, then fold in whipped cream and blueberries.
- Unroll the cooled cake, spread the filling evenly, and roll it back up without the towel. Trim the ends for a clean look.
- Wrap the cake roll in plastic wrap and chill for at least an hour before serving. Dust with powdered sugar or garnish with blueberries and lemon zest before serving.
