- 1 pound ground turkey
- 1 pound Brussels sprouts, trimmed and halved
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 1/4 cup chicken broth
- 1 tablespoon balsamic vinegar
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes, or until the onion is translucent.
- Add the minced garlic and cook for an additional 1 minute, stirring frequently to prevent burning.
- Increase the heat to medium-high and add the ground turkey to the skillet. Cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes.
- Stir in the smoked paprika, red pepper flakes (if using), salt, and pepper. Mix well to combine.
- Add the halved Brussels sprouts to the skillet and pour in the chicken broth. Stir to combine, then cover the skillet and let cook for 5-7 minutes, or until the Brussels sprouts are tender.
- Remove the lid and stir in the balsamic vinegar, cooking for an additional 2 minutes to allow the flavors to meld.
- Garnish with fresh parsley before serving.
Notes
- Feel free to adjust the level of spice by adding more or less red pepper flakes.
- This dish can be served over rice or quinoa for a more filling meal.
