Instructions
Step 1: Make the Cheesecake Filling
- In a mixing bowl, beat the softened cream cheese until smooth and creamy.
- Add the powdered sugar and vanilla extract, mixing until fully combined.
- Gently fold in the mashed raspberries (or jam) and the crushed graham crackers. The mixture should be thick enough to scoop.
Step 2: Shape the Balls
- Using a small cookie scoop or spoon, scoop out about 1 tablespoon of the mixture and roll it into a ball.
- Place the cheesecake balls on a parchment-lined tray and freeze for 30 minutes to firm up.
