Description

These buttery, melt-in-your-mouth strawberry shortbread cookies are a sweet and fruity twist on the classic. With a delicate crumb and the perfect balance of fresh strawberry flavor, they’re a treat everyone will love. Whether you’re hosting a party or just indulging in a cozy afternoon, these cookies are sure to be a hit!

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/4 tsp salt
  • 1/2 cup freeze-dried strawberries, crushed
  • 1 tbsp fresh strawberry jam (optional, for extra flavor)

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream the butter and powdered sugar together until light and fluffy. Add vanilla extract and mix until combined.
  • Gradually add the flour and salt, mixing just until the dough comes together.
  • Stir in the crushed freeze-dried strawberries.
  • Roll the dough into small balls and flatten each with a fork or your fingers to form a round shape.
  • Place the cookies on the prepared baking sheet, leaving some space between each.
  • Bake for 12-14 minutes, or until the edges just begin to turn golden.
  • Allow the cookies to cool completely on the baking sheet before transferring them to a wire rack.
  • Optional: Once cooled, add a small dollop of strawberry jam on top of each cookie for a little extra sweetness!

Notes

  • Make sure to use freeze-dried strawberries for the best flavor and texture. Fresh strawberries can make the dough too wet.
  • These cookies can be stored in an airtight container for up to one week.
  • For a more intense strawberry flavor, feel free to add a bit more freeze-dried strawberries to the dough.
