Instructions
Step 1: Prepare the Ingredients
- Preheat oven to 350°F (175°C).
- Grease and flour a 9×5-inch loaf pan, or line with parchment paper for easy removal.
- Toss diced strawberries with 1 tbsp flour to prevent them from sinking in the batter.
Step 2: Make the Batter
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon (if using).
- In a large mixing bowl, beat butter and sugar until light and fluffy.
- Add eggs, one at a time, beating well after each.
- Mix in vanilla and Greek yogurt (or buttermilk) until smooth.
- Gradually fold in the dry ingredients until just combined—do not overmix!
- Gently fold in the floured strawberries and any add-ins like chocolate chips or nuts.
Step 3: Bake the Bread
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Step 4: Make the Glaze (Optional but Delicious!)
- In a small bowl, whisk powdered sugar, strawberry puree, and vanilla until smooth.
