How often do you find yourself racing against time, trying to whip up a meal that satisfies everyone at the table? That’s where my recipe for Spinach Layers with Ricotta comes in—it’s a delightful, comforting dish that combines all the goodness of lasagna with the creaminess of ricotta and vibrant spinach. This layered wonder is not just a quick solution for a busy day; it’s also an easy way to impress your loved ones. Picture pulling this out of the oven, the cheese bubbly and golden, filling the air with heavenly aromas. Trust me, you’ll be making it again and again!
Ingredients
- 12 flat lasagna sheets (no-boil type or pre-cooked)
- 2 cups soft ricotta
- 2 cups shredded mozzarella
- ½ cup grated Parmesan
- 2 big eggs
- 2 cups cooked and drained fresh spinach (or 1 cup defrosted and squeezed frozen spinach)
- 3 cups tomato sauce
- 1 teaspoon powdered garlic
- 1 teaspoon dried onion
- 1 teaspoon herbs from Italy
- ½ teaspoon table salt
- ¼ teaspoon ground black pepper
- ½ pound cooked ground beef, turkey or chicken (optional)
- 1 cup cooked mushrooms or sliced zucchini (optional)
Instructions
- For fresh spinach, cook it in a skillet till soft, drain and chop it up. If using frozen, make sure it’s completely thawed and squeeze out all the water.
- Put ricotta, eggs, Parmesan, and all seasonings in a big bowl and stir them together. Add your cooked spinach and mix it all up.
- Put a little sauce on the bottom of your pan first. Then add noodles, cheese mix, mozzarella, and more sauce. Keep going with these layers and finish with noodles, sauce, and lots of mozzarella and Parmesan on top.
- Cover with foil and pop it in the oven at 190°C (375°F) for about 25 minutes.
- Then take the foil off and cook another 15-20 minutes until the cheese gets bubbly and golden on top.
- Don’t cut into it right away. Let it sit for 10 minutes so it doesn’t fall apart when you serve it.
Notes
- It is recommended to let the dish sit for 10 minutes before serving to maintain its structure.
- Using no-boil lasagna sheets can save time on preparation.
- Feel free to customize with your favorite vegetables or proteins.
