- 8 ounces rotini pasta
- 1 cup fresh spinach, chopped
- 1 can (14 ounces) artichoke hearts, drained and chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
Instructions
- Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large mixing bowl, combine the chopped spinach, artichoke hearts, cherry tomatoes, and red onion.
- In a separate bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, garlic powder, salt, and pepper until smooth.
- Add the cooled pasta to the vegetable mixture, then pour the dressing over the top. Toss gently to combine all ingredients evenly.
- Stir in the grated Parmesan cheese and fresh parsley, mixing until well incorporated.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld before serving.
