Ingredients

  • 8 ounces rotini pasta
  • 1 cup fresh spinach, chopped
  • 1 can (14 ounces) artichoke hearts, drained and chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the chopped spinach, artichoke hearts, cherry tomatoes, and red onion.
  3. In a separate bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, garlic powder, salt, and pepper until smooth.
  4. Add the cooled pasta to the vegetable mixture, then pour the dressing over the top. Toss gently to combine all ingredients evenly.
  5. Stir in the grated Parmesan cheese and fresh parsley, mixing until well incorporated.
  6. Cover and refrigerate for at least 30 minutes to allow the flavors to meld before serving.
