Description

Delicious soft caramel clusters with toasted pecans that melt in your mouth.

Ingredients

Scale
  • 1 cup granulated sugar
  • ½ cup light brown sugar, packed
  • ½ cup heavy cream
  • 5 tbsp unsalted butter
  • ¼ cup light corn syrup
  • 1 tsp vanilla extract
  • 1 ½ cups pecan halves, lightly toasted
  • Pinch of salt

Instructions

  1. Line a baking sheet with parchment paper and set aside. (⏱️ 5 minutes 📝)
  2. In a heavy saucepan over medium heat, combine granulated sugar, brown sugar, heavy cream, butter, corn syrup, and salt. Stir until melted and smooth. (⏱️ 5 minutes 🔥)
  3. Bring to a gentle boil, stirring occasionally, and cook until the mixture reaches 245–248°F (firm-ball stage). This keeps it soft and gooey. (⏱️ 10 minutes 🔥)
  4. Remove from heat and immediately stir in vanilla extract and toasted pecans. Stir gently until evenly coated — do NOT beat to maintain glossiness. (⏱️ 2 minutes 🍯)
  5. Spoon caramel pecan clusters onto the prepared baking sheet. (⏱️ 5 minutes 🍴)
  6. Let cool at room temperature until set but still soft and chewy. (⏱️ 20 minutes ❄️)

Notes

  • Store leftovers in an airtight container to maintain softness.
  • Substitute walnuts for pecans if desired.
