Description

As a busy mom, I know how challenging it can be to whip up a meal that’s both quick and delicious. That’s where my Shrimp and Sausage Dirty Rice comes in! This dish is a delightful blend of flavors that will impress your family without taking hours in the kitchen.

Ingredients

Scale
  • 1/2 lb andouille sausage, sliced
  • 1/2 lb shrimp, peeled and deveined
  • 3 cups cooked long-grain white rice (preferably day-old)
  • 1 small yellow onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil or butter
  • 1 tbsp Cajun seasoning
  • 1 tsp paprika
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil or butter in a large skillet over medium-high heat.
  2. Add sliced andouille sausage and cook until browned on both sides. Remove and set aside.
  3. In the same skillet, add onion, bell pepper, and celery. Sauté for 5–7 minutes until soft.
  4. Add garlic and cook for 1 minute more, stirring frequently.
  5. Sprinkle in Cajun seasoning, paprika, salt, and pepper. Stir to coat the vegetables.
  6. Add shrimp to the skillet and cook for 2–3 minutes per side until pink and opaque.
  7. Return sausage to the pan, then add cooked rice. Stir everything together and cook for another 3–5 minutes until heated through.
  8. Taste and adjust seasoning as needed. Garnish with fresh parsley before serving.

Notes

  • Using day-old rice helps to prevent the dish from becoming mushy.
  • Feel free to adjust the level of Cajun seasoning to your taste.
  • This dish can be made in advance and reheated for a quick meal.
