Ingredients
•Chicken Bites:
•1 lb chicken breast or thighs, cut into bite-sized pieces
•2 tbsp soy sauce
•2 tbsp sesame oil
•1 tbsp honey
•1 tbsp rice vinegar
•1 clove garlic, minced
•1 tsp ginger, grated
•1 tbsp sesame seeds (plus extra for garnish)
•Broccoli:
•2 cups broccoli florets
•1 tbsp olive oil
•Salt and pepper, to taste
•Coconut Rice:
•1 cup jasmine rice
•1 cup coconut milk
•1 cup water
•Pinch of salt
•Optional Garnishes:
•Sliced green onions
•Lime wedges
•Extra sesame seeds
Instructions
1.Prepare Coconut Rice: Rinse jasmine rice under cold water until the water runs clear. In a saucepan, combine rice, coconut milk, water, and a pinch of salt. Bring to a boil, reduce heat, cover, and simmer for 15 minutes. Remove from heat and let sit for 5 minutes before fluffing with a fork.
2.Roast Broccoli: Preheat oven to 400°F (200°C). Toss broccoli florets with olive oil, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes, tossing halfway through, until tender and slightly crispy.
3.Cook Chicken Bites: In a skillet over medium heat, heat sesame oil. Add chicken pieces and cook for 4-5 minutes on each side until golden and cooked through. In a small bowl, whisk together soy sauce, honey, rice vinegar, garlic, and ginger. Pour over the chicken and simmer for 2-3 minutes until the sauce thickens and coats the chicken. Sprinkle with sesame seeds.
4.Assemble Bowls: Start with a base of coconut rice. Add roasted broccoli and sesame chicken bites. Garnish with green onions, lime wedges, and additional sesame seeds if desired.
