As a busy mom, I know how precious time can be, especially when it comes to preparing meals. That’s why I absolutely adore Roasted Balsamic Red Potatoes. They’re not just a side dish; they’re a quick solution for a hectic day. With their crispy edges and tangy balsamic flavor, these potatoes can elevate any meal.
Ingredients
Scale
- 2 pounds red potatoes, halved
- 3 tablespoons olive oil
- 1/4 cup balsamic vinegar
- 2 teaspoons garlic powder
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine the halved red potatoes, olive oil, balsamic vinegar, garlic powder, dried rosemary, dried thyme, salt, and pepper. Toss until the potatoes are evenly coated.
- Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and tender, flipping them halfway through for even cooking.
- Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
Notes
- For extra flavor, you can add other herbs like oregano or basil.
- Make sure to cut the potatoes into similar sizes for even cooking.
