  • 2 pounds red potatoes, halved
  • 3 tablespoons olive oil
  • 1/4 cup balsamic vinegar
  • 2 teaspoons garlic powder
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine the halved red potatoes, olive oil, balsamic vinegar, garlic powder, dried rosemary, dried thyme, salt, and pepper. Toss until the potatoes are evenly coated.
  3. Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and tender, flipping them halfway through for even cooking.
