  • ¾ cup (12 Tablespoons or 170 g) unsalted butter, softened but still cool, cut into ½-inch pieces
  • 1 teaspoon vanilla extract
  • 2 cups (300 g) diced rhubarb
  • ⅓ cup (100 g) granulated sugar (for the filling)
  • 1 Tablespoon cornstarch or flour
  • 1 Tablespoon fresh lemon juice
  • A pinch of salt

Instructions

  1. Prepare the rhubarb filling by combining diced rhubarb, granulated sugar, cornstarch, and lemon juice in a saucepan over medium heat. Stir and bring to a gentle boil until thickened.
  2. Make the crumble topping by mixing flour, oats, brown sugar, granulated sugar, baking powder, and salt. Add butter and vanilla, mixing until it resembles coarse sand.
  3. Assemble the bars by pressing half of the crumble mixture into the bottom of a prepared baking dish, baking for 20 minutes, then spreading the cooled rhubarb filling and topping with the remaining crumble.
  4. Bake the assembled bars for 30 to 35 minutes until the rhubarb is bubbling and the top is golden brown. Let cool completely before cutting into squares.
