Ingredients
- 1 ½ cups (187 g) all-purpose flour
- 1 ½ cups (150 g) rolled oats
- ⅓ cup (66 g) packed light brown sugar
- ⅓ cup (66 g) granulated sugar
- ¼ teaspoon baking powder
- ¼ teaspoon salt
- ¾ cup (12 Tablespoons or 170 g) unsalted butter, softened but still cool, cut into ½-inch pieces
- 1 teaspoon vanilla extract
- 2 cups (300 g) diced rhubarb
- ⅓ cup (100 g) granulated sugar (for the filling)
- 1 Tablespoon cornstarch or flour
- 1 Tablespoon fresh lemon juice
- A pinch of salt
Instructions
- Prepare the rhubarb filling by combining diced rhubarb, granulated sugar, cornstarch, and lemon juice in a saucepan over medium heat. Stir and bring to a gentle boil until thickened.
- Make the crumble topping by mixing flour, oats, brown sugar, granulated sugar, baking powder, and salt. Add butter and vanilla, mixing until it resembles coarse sand.
- Assemble the bars by pressing half of the crumble mixture into the bottom of a prepared baking dish, baking for 20 minutes, then spreading the cooled rhubarb filling and topping with the remaining crumble.
- Bake the assembled bars for 30 to 35 minutes until the rhubarb is bubbling and the top is golden brown. Let cool completely before cutting into squares.
