Ingredients

  • 1½ cups white, spelt, or oat flour
  • ½ cup protein powder (60g)
  • 1 tsp baking soda
  • ¾ tsp baking powder
  • ¾ tsp salt
  • ½ tsp cinnamon
  • 1½ cups mashed overripe banana (about 3 bananas)
  • ½ cup yogurt (regular or dairy-free) or additional banana
  • ½ cup pure maple syrup, honey, or agave
  • ⅓ cup oil or water
  • 2 tsp pure vanilla extract
  • Optional: chocolate chips, walnuts, shredded coconut, etc.

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line with parchment paper.
  2. In a large bowl, mash the bananas.
  3. Add the yogurt, sweetener, oil or water, and vanilla extract. Mix until combined.
  4. Add the dry ingredients: flour, protein powder, baking soda, baking powder, salt, and cinnamon. Stir until just combined.
  5. Fold in any optional add-ins.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 40 minutes. Then turn off the oven and leave the bread inside for 5 more minutes without opening the door.
  8. Remove from the oven and let cool completely before slicing.
