Description

This Pineapple Upside Down Cake Fudge takes all the tropical flavors of the classic dessert and transforms them into rich, creamy fudge! A smooth white chocolate base infused with pineapple juice, sweetened condensed milk, and vanilla is layered with caramelized brown sugar, maraschino cherries, and a crunchy pecan topping. Perfect for parties, gifting, or whenever you need a sweet tropical treat!

Ingredients

Scale
  • 2 cups white chocolate chips
  • 1 can (14 oz) sweetened condensed milk
  • 1/4 cup unsalted butter
  • 1/2 cup pineapple juice (from canned pineapple)
  • 1/4 cup crushed pineapple, drained
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup chopped maraschino cherries
  • 1/4 cup brown sugar (light or dark)
  • 1/4 cup chopped pecans (optional, for garnish)

Instructions

  1. Prepare the pan: Line an 8×8-inch baking dish with parchment paper. Lightly grease it for easy removal.
  2. Caramelized layer: Sprinkle brown sugar evenly over the bottom of the pan. Add chopped maraschino cherries and pecans (if using).
  3. Melt & mix: In a saucepan over medium heat, combine white chocolate chips, sweetened condensed milk, butter, and salt. Stir constantly until melted and smooth.
  4. Infuse with pineapple: Remove from heat and stir in pineapple juice, crushed pineapple, and vanilla extract. Mix well.
  5. Pour & set: Carefully pour the mixture over the brown sugar and cherry layer. Smooth the top with a spatula.
  6. Chill: Refrigerate for at least 4 hours or until firm.
  7. Slice & serve: Once set, lift the fudge out using the parchment paper, cut into squares, and enjoy!

Notes

  • Storage: Keep in an airtight container in the fridge for up to 1 week.
  • For a firmer texture: Freeze for 30 minutes before cutting.
  • Extra flavor: Toast the pecans before adding for a deeper, nuttier taste.
