For the Chicken:

  • 2 lbs boneless, skinless chicken thighs
  • 5 cloves garlic, peeled
  • ⅓ cup soy sauce
  • 2 tbsp lime juice
  • 1 tbsp extra virgin olive oil
  • 2 tsp cumin
  • 1 tsp paprika
  • ½ tsp dried oregano
  • Black pepper, to taste

For the Green Sauce:

  • 3 jalapeños, seeded and chopped
  • 1 cup fresh cilantro leaves
  • 2 green onions, chopped (green parts only)
  • 2 cloves garlic, peeled
  • ½ cup mayonnaise
  • ¼ cup Greek yogurt
  • 1 tbsp lime juice
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp extra virgin olive oil

Instructions

1. Make the Marinade

  • In a blender, combine garlic, soy sauce, lime juice, olive oil, cumin, paprika, oregano, and black pepper. Blend until smooth.

2. Marinate the Chicken

  • Place the chicken in a large zip-top bag or bowl. Pour the marinade over it, ensuring the chicken is well coated.
  • Cover and refrigerate for at least 8 hours (or up to 24 hours for maximum flavor).

3. Make the Green Sauce

  • Blend jalapeños, cilantro, green onions, garlic, mayo, Greek yogurt, lime juice, salt, and black pepper until smooth.
  • While the blender is running, slowly drizzle in the olive oil.
  • Transfer to a bowl and refrigerate until ready to serve.

4. Cook the Chicken

🔥 Option 1: Grilled Peruvian Chicken

  1. Preheat the grill to medium-high heat (350°F).
  2. Remove chicken from the marinade and shake off excess liquid.
  3. Grill for 5-6 minutes per side with the lid closed, or until the internal temperature reaches 165°F.

🔥 Option 2: Oven-Roasted Peruvian Chicken

  1. Preheat oven to 500°F.
  2. Place marinated chicken in a 9×13 baking dish and add 1 cup of water to prevent drying.
  3. Bake uncovered for 30 minutes.
  4. Tent with foil and continue baking for another 15 minutes, until the internal temperature is 165°F.
