Description

Ah, the sweet nostalgia of childhood! There’s something magical about the combination of peanut butter and jelly, isn’t there? Now, imagine that delightful duo transformed into a warm, comforting breakfast: Peanut Butter Jelly Stuffed French Toast. This recipe is not just a quick solution for a busy morning; it’s a dish that brings smiles to the table.

Ingredients

Scale
  • 4 slices of bread (white, whole wheat, or brioche)
  • 4 tbsp peanut butter (or any nut/seed butter)
  • 4 tbsp jelly or jam (strawberry, grape, or your favorite flavor)
  • 2 large eggs
  • ½ cup milk (whole, almond, or oat milk)
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • 1 tbsp butter (for cooking)
  • Whipped cream (optional, for topping)
  • For Vegan Option:
  • 4 slices of vegan bread
  • 4 tbsp peanut butter or almond butter
  • 4 tbsp fruit preserves (make sure they are vegan)
  • ½ cup non-dairy milk (like almond, soy, or oat milk)
  • 1 tbsp ground flaxseed (mixed with 3 tbsp water as an egg substitute)
  • ½ tsp vanilla extract
  • ½ tsp ground cinnamon
  • 1 tbsp coconut oil (for cooking)
  • Vegan whipped topping (optional, for topping)
  • Low-Sugar Option:
  • Sugar-free peanut butter
  • Sugar-free or low-sugar jelly/jam
  • Unsweetened almond milk or any other milk
  • Sugar substitute like stevia (optional, to taste)

Instructions

  1. Start by spreading 1 tablespoon of peanut butter on one side of each slice of bread. Follow with a layer of jelly or jam over the peanut butter.
  2. Use the back of a spoon to spread both evenly. Close each sandwich by pressing two slices of bread together.
  3. In a shallow bowl or pie plate, whisk together the eggs, milk, vanilla extract, and cinnamon until the mixture is smooth.
  4. If you’re using the vegan option, whisk the non-dairy milk, vanilla, and cinnamon, then add the flaxseed mixture.
  5. Carefully dip each peanut butter and jelly sandwich into the batter. Allow each side to soak for a few seconds.
  6. Heat a large skillet or griddle over medium heat. Add the butter or coconut oil and let it melt.
  7. Place each sandwich into the skillet and cook for 3–4 minutes per side, or until golden brown.
  8. Once the French toast is golden and crispy, transfer it to a plate. Top with whipped cream or vegan whipped topping, fresh fruit, powdered sugar, or maple syrup.

Notes

  • Make sure to spread the peanut butter and jelly right to the edges to prevent leakage.
  • Use sturdier bread for a custardy texture.
  • Adjust cooking time based on the thickness of the bread.
