Ingredients

  • 200g (7 oz) feta cheese, crumbled
  • 100g (3.5 oz) cream cheese, softened
  • 1 tbsp fresh thyme leaves
  • 8 sheets phyllo pastry
  • 4 tbsp melted butter or olive oil
  • 2 tbsp sesame seeds (optional, for topping)

For the Chili Honey:

  • 3 tbsp honey
  • 1 tsp red chili flakes
  • 1 tsp fresh lemon juice

Instructions

  1. Prepare Filling
    • In a small bowl, mix feta cheese, cream cheese, and fresh thyme until smooth and combined.
  2. Prepare Phyllo Rolls
    • Preheat oven to 200°C (400°F).
    • Lay one sheet of phyllo pastry on a clean surface and brush lightly with melted butter. Fold it in half lengthwise.
    • Place 1-2 tablespoons of the cheese mixture along one short end, then roll tightly to form a cylinder. Tuck the sides as you roll.
    • Repeat with the remaining phyllo sheets and filling.
  3. Bake the Rolls
    • Arrange the rolls seam-side down on a lined baking sheet. Brush the tops with more melted butter and sprinkle with sesame seeds (if using).
    • Bake for 15-18 minutes or until golden and crispy.
  4. Prepare the Chili Honey
    • In a small saucepan, gently warm honey, chili flakes, and lemon juice over low heat. Stir until combined and remove from heat.
  5. Serve
    • Drizzle the warm chili honey over the baked rolls just before serving. Garnish with additional thyme leaves if desired.

Notes

  • Substitute cream cheese with ricotta for a lighter filling.
  • Add finely chopped roasted red peppers to the filling for extra flavor.
  • Store leftovers in an airtight container in the fridge and reheat in the oven for best results.
