Ingredients
- 1 lb ground beef (lean preferred)
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 (14.5 oz) can diced tomatoes
- 1 (8 oz) can tomato sauce
- 1 cup elbow macaroni
- 1 ½ cups shredded cheddar cheese
- 1 cup whole milk (or heavy cream for extra creaminess)
- 1 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- Salt and pepper, to taste
- Fresh parsley, for garnish (optional)
Instructions
- Brown the Beef
In a large pot or Dutch oven, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat if necessary. - Cook the Aromatics
Add diced onion and garlic to the pot, sautéing until the onion becomes translucent, about 3-4 minutes. - Build the Broth
Pour in beef broth, diced tomatoes, tomato sauce, and Worcestershire sauce, and add smoked paprika. Stir well and bring to a simmer. - Add the Pasta
Once simmering, add in the macaroni, stirring to ensure it doesn’t stick. Let the pasta cook until tender, about 8-10 minutes, stirring occasionally. - Finish with Cheese and Milk
Lower the heat and gradually stir in cheddar cheese and milk. Stir until the cheese melts and combines into the soup, creating a creamy texture. - Season and Serve
Taste and season with salt and pepper as needed. Ladle into bowls, garnish with fresh parsley if desired, and serve hot!
Notes
- For an even richer taste, replace whole milk with heavy cream.
- Add diced pickles on top for a tangy twist that mimics a classic cheeseburger garnish.
- Keep an eye on the pasta as it cooks in the broth to prevent overcooking.
