- 1 cup semisweet chocolate chips

Instructions
- Preheat your oven to 180°C / 350°F and line a baking sheet with parchment paper. Spread the shredded coconut in an even layer and bake for 8-10 minutes, stirring occasionally.
- In a large mixing bowl, combine the toasted coconut, caramel sauce, condensed milk, and vanilla extract, mixing thoroughly.
- Line a tray with parchment paper and shape the mixture into mounds, pressing them slightly to flatten.
- Melt the semisweet chocolate chips in a microwave-safe bowl in 30-second intervals until smooth.
- Dip the bottom of each coconut mound into the melted chocolate and place chocolate-side down on the tray.
- Drizzle melted chocolate and warmed caramel over the tops of the cookie bites.
- Refrigerate for 15-20 minutes until the chocolate and caramel are set.
