- 2 cups whole milk

- 3 large egg yolks
- 1 tsp vanilla extract
Topping
- 1 1/2 cups whipped topping (or freshly whipped cream)

Instructions
- Prepare the Crust
- Mix graham cracker crumbs and melted butter in a bowl until evenly moistened.
- Press the mixture firmly into a 9-inch pie pan. Chill in the refrigerator while preparing the filling.
- Make the Butterscotch Filling
- In a medium saucepan, heat the butterscotch chips and 1 1/2 cups of milk over medium heat, stirring until melted and smooth.
- In a small bowl, whisk together the remaining 1/2 cup milk, sugar, cornstarch, and egg yolks until smooth. Gradually add this mixture to the saucepan, whisking constantly.
- Cook until the mixture thickens, about 5-7 minutes. Remove from heat and stir in vanilla extract.
- Assemble the Pie
- Pour the butterscotch filling into the chilled crust. Smooth the surface with a spatula.
- Cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming. Refrigerate for at least 4 hours or until fully set.
