- 1 medium head cauliflower, cut into florets
- 2 tbsp olive oil, divided
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tsp ground cumin
- ½ tsp ground turmeric
- ½ tsp smoked paprika
- ½ tsp ground coriander
- 4 cups vegetable or chicken broth
- 1 cup coconut milk or heavy cream
- 1–2 tbsp fresh lemon juice (to taste)
- Salt and black pepper, to taste
- Fresh herbs (parsley, dill, or cilantro), for garnish
Instructions
- Preheat oven to 425°F (220°C). Toss cauliflower florets with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes, or until golden and tender.
- In a large pot, heat remaining 1 tbsp olive oil over medium heat. Add onion and cook until translucent, about 5 minutes. Add garlic and cook for 1 minute more.
- Stir in cumin, turmeric, smoked paprika, and coriander. Cook for 30 seconds. Add roasted cauliflower and broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Use an immersion blender to purée the soup until smooth, or transfer in batches to a countertop blender and blend carefully.
- Stir in coconut milk (or cream) and lemon juice. Adjust seasoning with salt and pepper. Heat through and garnish with fresh herbs before serving.
