  • 1/4 cup (50 g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

  • 1 3/4 cups (220 g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup (120 g) semi-sweet chocolate chips
  • 3/4 cup (100 g) maraschino cherries, drained, patted dry, and chopped
  • 1 tablespoon maraschino cherry juice (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch (20×20 cm) baking dish with parchment paper.
  2. Drain the maraschino cherries and pat them dry, then chop them into small pieces.
  3. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2 minutes).
  4. Add the egg, vanilla extract, and almond extract (if using) and mix until fully combined.
  5. Stir in the flour, baking soda, and salt until just combined.
  6. Gently fold in the chocolate chips and chopped maraschino cherries, adding cherry juice for a pink hue if desired.
  7. Press the dough evenly into the prepared baking dish and smooth the top with a spatula.
  8. Sprinkle extra chocolate chips on top for decoration, if desired.
