Description

Delicious Irish Cream Chocolate Chip Cookies that combine the rich flavor of Irish cream liqueur with chocolate chips for a delightful treat.

Ingredients

Scale
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1/4 cup Irish cream liqueur
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups semisweet chocolate chips
  • 1/2 cup chopped toasted pecans or walnuts (optional)

Instructions

  1. Preheat oven to 350°F. Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt until evenly distributed.
  3. In a large bowl, beat softened butter, brown sugar, and granulated sugar together until light and fluffy, approximately 2 minutes.
  4. Add eggs, Irish cream liqueur, and vanilla extract to the butter mixture. Beat until fully combined.
  5. Gradually add dry ingredients to wet mixture, stirring until just combined. Do not overmix.
  6. Fold chocolate chips and nuts, if using, into the dough until evenly distributed.
  7. Drop rounded tablespoon portions of dough onto prepared baking sheets, spacing approximately 2 inches apart.
  8. Bake for 11 to 13 minutes until edges are golden brown and centers appear just set.
  9. Cool on baking sheets for 3 minutes, then transfer to a wire cooling rack for complete cooling.

Notes

  • Store cookies in an airtight container for up to a week.
  • You can substitute the Irish cream liqueur with a non-alcoholic version for a kid-friendly option.
  • For an extra flavor boost, consider adding a dash of espresso powder to the dough.
