- Prepare the Sweet Potato: Preheat your oven to 350°F (175°C). Peel and cube the sweet potato. Steam or boil until fork-tender, about 10-12 minutes. Mash until smooth and let it cool slightly.
- Mix the Wet Ingredients: In a large bowl, combine the mashed sweet potato, maple syrup, melted coconut oil, eggs, and vanilla extract. Whisk together until smooth and well-blended.
- Add the Dry Ingredients: Sift in the almond flour, cocoa powder, baking powder, and salt. Gently fold until just combined—overmixing will take away some of that fudgy texture we’re after.
