  • 2 carrots sliced into 2-inch pieces
  • 2 cloves of garlic minced
  • 2 cups of Burgundy red wine
  • 1 bay leaf
  • 1 teaspoon of fresh thyme leaves
  • 8 ounces of brown mushrooms

Instructions

  1. Preheat your oven to 325 degrees Fahrenheit.
  2. In a large Dutch oven, melt the butter over medium-high heat. Toss the beef in a mixture of flour, kosher salt, and black pepper until coated. Sear the beef on all sides until browned, about 4-5 minutes.
  3. Remove the beef and add the pearl onions and carrots to the pot. Sauté for 4-5 minutes until they begin to brown.
  4. Add the minced garlic and sauté briefly before deglazing with the Burgundy wine. Stir to lift browned bits from the pot.
  5. Return the beef to the pot, add the bay leaf and fresh thyme, cover, and transfer to the oven.
  6. Cook covered in the oven for 2 hours.
  7. Add the brown mushrooms to the stew and return to the oven for an additional hour.
