- 8 all-beef hot dogs
- 8 soft hot dog buns, lightly toasted
- For the Firecracker Sauce:
- 1/4 cup mayonnaise
- 2 tablespoons sriracha sauce
- 1 tablespoon honey
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 tablespoon fresh lime juice
- For the Toppings:
- 1 cup shredded sharp cheddar cheese (or pepper jack)
- 1/2 cup diced red onions
- 1/2 cup sliced jalapeños (optional)
- Fresh cilantro leaves
Instructions
- In a small bowl, whisk together mayonnaise, sriracha, honey, smoked paprika, garlic powder, and lime juice until smooth.
- Prepare toppings by dicing onions, slicing jalapeños, shredding cheese, and chopping cilantro.
- Preheat grill to medium-high heat (about 400°F).
- Grill hot dogs for 5–7 minutes, turning occasionally until heated through and lightly charred.
- Toast buns on the grill during the last 2 minutes until lightly golden.
- Spread firecracker sauce inside each bun.
- Add grilled hot dog, then top with cheese, onions, jalapeños, and cilantro.
- Drizzle extra sauce on top if desired and serve immediately.
Notes
- Feel free to adjust the level of spiciness by modifying the amount of sriracha or jalapeños.
- These hot dogs can also be made on a grill pan if you don’t have access to an outdoor grill.
- For a crunchier texture, add crushed tortilla chips on top of the hot dogs before serving.
