  • 1/2 cup green olives, pitted and sliced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup capers, drained
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup mozzarella balls, halved
  • 1/4 cup olive oil
  • 1/4 cup vodka
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool. Set aside.
  2. In a large mixing bowl, combine the sliced green olives, Kalamata olives, cherry tomatoes, red onion, capers, parsley, and mozzarella balls.
