Description

A delightful recipe for crispy, chewy, and creamy Oreo macarons that are sure to impress anyone.

Ingredients

Scale
  • 1 3/4 cups powdered sugar
  • 1 cup almond flour
  • 3 tablespoons cocoa powder
  • 1/4 teaspoon salt
  • 3 large egg whites, room temperature
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 4 ounces white chocolate, chopped
  • 6 Oreo cookies, finely crushed

Instructions

  1. Preheat the oven to 300°F (150°C) and line 2 baking sheets with parchment paper.
  2. In a food processor, combine powdered sugar, almond flour, cocoa powder, and salt. Process until finely ground.
  3. Sift the mixture into a large bowl, discarding any large pieces.
  4. In a separate bowl, beat egg whites on medium speed until frothy.
  5. Gradually add granulated sugar, increase speed to high, and beat until stiff, glossy peaks form.
  6. Fold the dry ingredients into the meringue in three parts, gently turning the batter until smooth and shiny.
  7. Transfer the batter to a piping bag fitted with a round tip.
  8. Pipe small rounds onto the prepared baking sheets, leaving space between each macaron.
  9. Tap the baking sheets on the counter to release air bubbles.
  10. Let the macarons sit at room temperature until a skin forms, about 30 minutes.
  11. Bake for 15-18 minutes, or until the feet are well-risen and the tops are firm.
  12. Cool completely on the baking sheets before removing.
  13. For the filling, heat heavy cream in a small saucepan until simmering.
  14. Pour over the chopped white chocolate in a bowl and let sit for 1-2 minutes.
  15. Stir until smooth, then fold in the crushed Oreo cookies.
  16. Let the ganache cool until thickened and pipeable.
  17. Pair the macaron shells and pipe the Oreo ganache onto one shell, sandwich with the other.
  18. Refrigerate the macarons for at least 24 hours to mature before serving.

Notes

  • Make sure egg whites are at room temperature for better volume.
  • Be gentle when folding the dry ingredients to maintain the airiness of the batter.
  • Allow the macarons to mature in the fridge to enhance their flavor and texture.
