As a busy mom, I know how challenging it can be to whip up a meal that feels special yet doesn’t take hours to prepare. That’s where my Creamy Seafood Stuffed Shells come in! This delightful dish is not only a feast for the eyes but also a comforting hug for the taste buds. Imagine tender pasta shells filled with a rich seafood mixture, topped with marinara sauce and melted cheese. It’s perfect for impressing your loved ones or simply treating yourself after a long day. Let’s dive into this culinary adventure together!

Ingredients

Scale
  • 12 jumbo pasta shells
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces shrimp, peeled and deveined
  • 8 ounces scallops, chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 2 cups marinara sauce

Instructions

  1. In a mixing bowl, combine the seafood mixture with ricotta cheese, 1/2 cup of mozzarella cheese, grated Parmesan cheese, chopped parsley, lemon juice, salt, and pepper. Mix everything together until well combined.
  2. Take each cooked pasta shell and carefully stuff it with the creamy seafood filling. Place the stuffed shells in a greased 9×13 inch baking dish.
  3. Pour the marinara sauce evenly over the top of the stuffed shells.
  4. Sprinkle the remaining mozzarella cheese on top.
  5. Preheat your oven to 375°F (190°C). Cover the baking dish with aluminum foil and bake for 25 minutes.
  6. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden brown.

Notes
