Instructions
- In a medium-sized pot, heat the olive oil over medium heat. Once the oil is warm, add the minced garlic and sauté it for about 30 seconds, or until it becomes fragrant and lightly golden.
- Add the rinsed jasmine rice to the pot, stirring frequently. Toast the rice for about 1 minute, enhancing its nutty aroma.
- Carefully pour in the vegetable broth and sprinkle in the ground cumin. Stir to combine, then increase the heat to bring the mixture to a vigorous boil. Once boiling, lower the heat to a gentle simmer, covering the pot with a lid.
- Allow the rice to simmer for approximately 15 minutes, or until it is tender and all the liquid has been absorbed. Once cooked, remove the pot from the heat but keep it covered for an additional 5 minutes to steam.
- After resting, fluff the rice gently with a fork. Incorporate the lime zest, lime juice, and finely chopped cilantro into the rice, mixing thoroughly. Season with salt and freshly ground black pepper to taste.
- Serve the cilantro lime rice warm as a delightful side dish or as a flavorful base for your choice of protein or roasted vegetables.
