Description

As a busy mom, I know how challenging it can be to whip up a meal that pleases everyone. That’s where my beloved cheeseburger soup comes in! This creamy delight combines all the flavors of a classic cheeseburger into a comforting bowl.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 medium potatoes, peeled and diced
  • 1 cup milk
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 4 slices cooked bacon, crumbled
  • 2 tablespoons flour
  • Salt and pepper to taste
  • Optional toppings: additional shredded cheese, diced pickles, chives

Instructions

  1. In a large pot, cook the ground beef over medium heat until browned, breaking it apart with a spoon as it cooks. Drain any excess fat and set the beef aside.
  2. In the same pot, sauté the diced onion in a little bit of oil over medium heat for about 5 minutes, until softened. Add the minced garlic and cook for an additional minute until fragrant.
  3. Sprinkle the flour over the onions and garlic, stirring to coat them evenly. Cook for 1-2 minutes to eliminate the raw flour taste.
  4. Gradually add the chicken broth, stirring constantly to prevent lumps from forming. Bring the mixture to a simmer.
  5. Add the diced potatoes to the pot, cover, and cook for about 10-15 minutes, or until the potatoes are tender.
  6. Once the potatoes are cooked, stir in the milk, shredded cheddar cheese, and sour cream. Continue stirring until the cheese is fully melted and the soup is creamy.
  7. Add the cooked ground beef back into the pot and stir to combine. Season the soup with salt and pepper to taste.
  8. Ladle the soup into bowls and top with crumbled bacon and additional shredded cheese if desired.

Notes

  • For a thicker soup, you can add more flour or reduce the amount of broth.
  • This soup can be stored in the refrigerator for up to 3 days.
  • Reheat gently on the stove, adding a little extra milk if needed to thin it out.
