Cheddar Bay Ground Beef Cobbler is a comforting dish that combines lean ground beef, mixed vegetables, and a cheesy biscuit topping for a hearty meal.


Ingredients

  • 1.5 lbs Lean Ground Beef (90% or 93% lean is best)
  • 1 small Onion, diced
  • 2 cups Frozen Mixed Vegetables (peas, carrots, and corn)
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 can (10.5 oz) Condensed Cream of Mushroom or Celery Soup
  • 1/2 cup Beef Broth (to thin the sauce)
  • 2 cups Cheddar Bay Biscuit Mix (plus ingredients required on the box)
  • 1 cup Shredded Sharp Cheddar Cheese
  • Optional: Fresh parsley or melted garlic butter for the topping

Instructions

  1. Preheat your oven to 400°F (200°C). In a large oven-safe skillet or Dutch oven, brown the ground beef with the diced onions over medium-high heat. Cook until the beef is no longer pink. Drain any excess fat to keep the meal lean and healthy.
  2. Stir in the garlic powder, onion powder, salt, and pepper. Add the frozen vegetables, the condensed soup, and the beef broth. Let the mixture simmer for about 5 minutes until it’s thick and bubbly. If you aren’t using an oven-safe skillet, transfer this mixture to a 9×13 baking dish now.
  3. In a separate bowl, prepare the Cheddar Bay biscuit dough according to the package instructions. Stir in the extra cup of shredded cheddar cheese for maximum cheesiness.
  4. Drop rounded tablespoons of the biscuit dough directly onto the hot beef mixture. You don’t have to be perfect here—the “cobbler” look comes from the rustic, uneven topping.
  5. Place the dish in the oven and bake for 15–20 minutes. The biscuits should be high, fluffy, and golden brown on top, while the beef filling bubbles up around the edges.
  6. If your biscuit mix came with a garlic herb seasoning packet, mix it with a little melted butter and brush it over the warm biscuits as soon as they come out of the oven.
