- Cookie Cups
- ½ cup butter (softened)
- ½ cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 ¼ cups all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- Custard Filling
- 1 cup milk
- 2 tablespoons cornstarch
- ¼ cup sugar
- 1 egg yolk
- 1 teaspoon vanilla extract
- Chocolate Topping
- ½ cup chocolate chips
- ¼ cup heavy cream
Instructions
- Make Cookie Dough: Cream butter and sugar until smooth. Add egg and vanilla extract. Mix flour, baking powder, and salt, then combine with wet ingredients.
- Shape & Bake: Preheat oven to 175°C (350°F). Grease a mini muffin pan. Press dough into each cup to form a small shell. Bake for 10–12 minutes until lightly golden. Press the center gently to create a cavity if needed. Let cool completely.
- Make Custard: Mix cornstarch with a little milk. Heat remaining milk and sugar. Add cornstarch mixture and egg yolk. Cook until thick. Remove from heat, add vanilla, and cool.
- Fill Cookie Cups: Spoon or pipe custard into each cookie cup.
- Make Chocolate Topping: Heat cream until warm. Pour over chocolate chips. Stir until smooth.
- Finish: Spoon chocolate topping over each filled cookie bite. Chill for 20–30 minutes to set.
Notes
- Make sure the cookie cups are completely cool before filling to prevent melting.
- Store leftovers in an airtight container in the refrigerator.
- For a richer flavor, use dark chocolate chips for the topping.
