- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon

- 2 cups milk (or dairy-free alternative)
- 1/4 cup maple syrup (or honey)
- 2 large eggs
- 2 tablespoons melted butter (or coconut oil)
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
- Additional blueberries for topping (optional)
Instructions
- Preheat your oven to 375°F (190°C). Grease a baking dish (8×8 inch or similar size) with butter or cooking spray.
- In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, and salt.
- In another bowl, whisk together the milk, maple syrup, eggs, melted butter, and vanilla extract.
- Pour the wet ingredients over the dry ingredients and stir until well combined.
- Gently fold in the blueberries.
- Pour the mixture into the prepared baking dish, spreading it out evenly.
- If desired, scatter some additional blueberries on top.
- Bake in the preheated oven for about 30-35 minutes, or until the top is golden brown and the oatmeal is set.
- Remove from the oven and let it cool for a few minutes before serving.
- Serve warm, optionally topped with yogurt, additional maple syrup, or extra blueberries.
