  • 1 teaspoon baking powder

  • 2 cups milk (or dairy-free alternative)
  • 1/4 cup maple syrup (or honey)
  • 2 large eggs
  • 2 tablespoons melted butter (or coconut oil)
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
  • Additional blueberries for topping (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a baking dish (8×8 inch or similar size) with butter or cooking spray.
  2. In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, and salt.
  3. In another bowl, whisk together the milk, maple syrup, eggs, melted butter, and vanilla extract.
  4. Pour the wet ingredients over the dry ingredients and stir until well combined.
  5. Gently fold in the blueberries.
  6. Pour the mixture into the prepared baking dish, spreading it out evenly.
  7. If desired, scatter some additional blueberries on top.
  8. Bake in the preheated oven for about 30-35 minutes, or until the top is golden brown and the oatmeal is set.
  9. Remove from the oven and let it cool for a few minutes before serving.
  10. Serve warm, optionally topped with yogurt, additional maple syrup, or extra blueberries.
