- 1 everything bagel, roughly torn
- 1 (15-ounce) can cannellini beans, drained and rinsed
- ⅓ cup lemon basil pesto (store-bought or homemade)
- 1 tablespoon white wine vinegar
- Juice of 1 lemon
- Flaky sea salt, to taste
- Crushed red pepper flakes, to taste
- 6 cups baby arugula
- ¼ cup freshly shaved Parmesan cheese
- 1 tablespoon everything bagel spice (store-bought or homemade)
Instructions
- Heat 2 tablespoons of extra-virgin olive oil in a large skillet over medium heat.
- Add the torn bagel pieces and cook for about 5 minutes, or until golden brown and crisp.
- Remove from heat and set aside to cool slightly.
- In a food processor, combine fresh basil leaves, garlic, pine nuts, Parmesan cheese, and olive oil to make the pesto.
- Blend until smooth, adding lemon juice for brightness and seasoning with salt and pepper to taste.
- In a medium bowl, combine the drained cannellini beans with the pesto, remaining tablespoon of olive oil, white wine vinegar, and lemon juice.
- Season with flaky sea salt and crushed red pepper flakes, then stir until evenly coated.
- Add the baby arugula, shaved Parmesan, and everything bagel spice to the bean mixture and toss gently.
- Divide the salad into bowls and top with crispy bagel croutons.
