Ingredients

  • 1 everything bagel, roughly torn
  • 1 (15-ounce) can cannellini beans, drained and rinsed
  • ⅓ cup lemon basil pesto (store-bought or homemade)
  • 1 tablespoon white wine vinegar
  • Juice of 1 lemon
  • Flaky sea salt, to taste
  • Crushed red pepper flakes, to taste
  • 6 cups baby arugula
  • ¼ cup freshly shaved Parmesan cheese
  • 1 tablespoon everything bagel spice (store-bought or homemade)

Instructions

  1. Heat 2 tablespoons of extra-virgin olive oil in a large skillet over medium heat.
  2. Add the torn bagel pieces and cook for about 5 minutes, or until golden brown and crisp.
  3. Remove from heat and set aside to cool slightly.
  4. In a food processor, combine fresh basil leaves, garlic, pine nuts, Parmesan cheese, and olive oil to make the pesto.
  5. Blend until smooth, adding lemon juice for brightness and seasoning with salt and pepper to taste.
  6. In a medium bowl, combine the drained cannellini beans with the pesto, remaining tablespoon of olive oil, white wine vinegar, and lemon juice.
  7. Season with flaky sea salt and crushed red pepper flakes, then stir until evenly coated.
  8. Add the baby arugula, shaved Parmesan, and everything bagel spice to the bean mixture and toss gently.
  9. Divide the salad into bowls and top with crispy bagel croutons.
