Description

Ingredients

  • 2 tbsp freshly squeezed lemon juice
  • 1/4 cup fresh basil leaves, chopped
  • 4 oz cream cheese, softened
  • 2 large flour tortillas
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Optional: Capers, avocado slices, red onion, spinach or arugula

Instructions

  1. Prepare the salmon by rinsing, drying, and seasoning with salt and pepper. Bake at 375°F (190°C) for 12-15 minutes.
  2. Make the lemon basil filling by mixing cream cheese and lemon juice, then folding in chopped basil, salt, and pepper.
  3. Assemble the rolls by spreading the filling on a tortilla, placing the cooked salmon on top, and rolling tightly.
  4. Chill the rolls for a few minutes, then drizzle with olive oil and bake at 375°F (190°C) for 15-20 minutes until golden brown.
  5. Let cool slightly before slicing into pinwheels or serving whole.
