A delightful recipe for soft and fluffy cinnamon rolls filled with white chocolate, pistachios, and cinnamon, topped with a luscious white chocolate ganache.

- ¼ cup warm water (105-115℉)
- 2¼ tsp active dry yeast
- ¼ cup sugar
- ¾ cup warm milk
- 1 large egg
- ¼ cup unsalted butter, melted
- 1 tsp salt
- 3¾ cup all-purpose flour
- ½ cup unsalted butter, softened (for filling)
- ¼ cup brown sugar
- 1 tbsp cinnamon
- ¼ cup chopped pistachio
- 170 grams chopped white chocolate (for topping)
- ⅕ cup heavy cream
- ½ cup chopped pistachios (for topping)
Instructions
- In the bowl of a stand mixer, add the warm water. Sprinkle the yeast and about a teaspoon of the sugar. Let this stand for 5 minutes, until thick and foamy.
- Add the remaining sugar, milk, melted butter, egg, and salt. Stir with a wooden spoon. Gradually stir in the flour in three additions.
- Attach the dough hook to the mixer. Knead the dough on low speed, gradually increasing to medium high, for 3-6 minutes until smooth and stretchy.
- Shape the kneaded dough into a ball, cover with a clean towel or plastic film, and let rise for 1-1½ hours, until doubled in bulk.
- Gently deflate the risen dough, roll it into a 12 x 18 inch rectangle. Spread softened butter over the dough and sprinkle with cinnamon sugar mixture and chopped pistachios.
- Starting on the long edge, roll the dough into a tight log, cut into 12 equal portions, and arrange in a 9×13 inch baking pan with even spacing.
- Cover the dough and allow it to rise for 1 hour until puffy and soft. Preheat the oven to 350℉.
- Bake the buns for 20-25 minutes until lightly golden. Let the pan cool on a wire rack.
- Pour the cooled white chocolate ganache over the cinnamon rolls and sprinkle with additional pistachios.
