Ingredients

  • 4 cups seedless watermelon, cubed or balled

  • 2 cups cucumber, sliced (English cucumber preferred)

  • ¾ cup feta cheese, crumbled

  • 2 tablespoons fresh mint leaves, chopped or torn

  • Juice of 1 lime (or lemon)

  • 1 tablespoon extra virgin olive oil

  • Salt and black pepper to taste

  • Optional: thinly sliced red onion or arugula for an extra bite


Instructions

  • Prep your produce
    Cube the watermelon and slice the cucumber. If using red onion, slice it super thin and give it a quick soak in cold water to mellow the bite.

  • Mix the base
    In a large mixing bowl, combine watermelon, cucumber, and mint.

  • Add the feta
    Crumble the feta over the salad. Don’t mix too hard — you want some chunks to stay whole for creamy bites.

  • Dress and toss
    Drizzle with olive oil and lime juice. Season with a pinch of salt and pepper, then gently toss everything just to combine.

  • Chill and serve
    Serve immediately, or chill for 15–20 minutes. It’s best served cold, especially on a hot day!
