Ingredients

4 cups seedless watermelon, cubed or balled

2 cups cucumber, sliced (English cucumber preferred)

¾ cup feta cheese, crumbled

2 tablespoons fresh mint leaves, chopped or torn

Juice of 1 lime (or lemon)

1 tablespoon extra virgin olive oil

Salt and black pepper to taste

Optional: thinly sliced red onion or arugula for an extra bite
Instructions

Prep your produce
Cube the watermelon and slice the cucumber. If using red onion, slice it super thin and give it a quick soak in cold water to mellow the bite. -
Mix the base
In a large mixing bowl, combine watermelon, cucumber, and mint. -
Add the feta
Crumble the feta over the salad. Don’t mix too hard — you want some chunks to stay whole for creamy bites. -
Dress and toss
Drizzle with olive oil and lime juice. Season with a pinch of salt and pepper, then gently toss everything just to combine. -
Chill and serve
Serve immediately, or chill for 15–20 minutes. It’s best served cold, especially on a hot day!
