Description

A delicious and easy recipe for veggie cheese bagels, perfect for a quick snack or meal.


Ingredients

  • 8 bagels (regular, seeded, or everything style)
  • 1½ cups fresh spinach, roughly chopped
  • 1 cup drained and chopped artichoke hearts from can
  • 8 oz cream cheese, left at room temperature
  • 1 cup mozzarella cheese, shredded
  • ½ cup Parmesan cheese, freshly grated
  • 1 teaspoon powder made from dried garlic
  • ½ teaspoon dried onion powder
  • 1 tablespoon oil from olives
  • pepper and salt as needed
  • 1 tablespoon fresh parsley, chopped for topping

Instructions

  1. Cook spinach with oil until soft. Combine with drained artichokes, all three cheeses, and your spices.
  2. Cut bagels in half and toast them in oven at 350°F until slightly crisp, about 5-7 minutes.
  3. Load up each bagel half with the mixture. Pop in oven at 375°F for 12-15 minutes until cheese melts and bubbles.
  4. Sprinkle chopped parsley on top and enjoy while hot.

Notes

  • Can substitute different cheeses based on preference.
  • For a spicier kick, add red pepper flakes to the cheese mixture.
  • These bagels are best enjoyed fresh but can be stored in the fridge for a day.
