Description

A refreshing and vibrant salad perfect for summer, loaded with fresh ingredients and a delicious dressing.


Ingredients

  • 2 cups mixed greens (arugula, spinach, or spring mix)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, thinly sliced
  • 1 avocado, diced
  • ½ red onion, thinly sliced
  • 1 cup fresh strawberries or peaches, sliced
  • ½ cup crumbled feta or goat cheese
  • ¼ cup toasted pecans or almonds
  • ¼ cup fresh basil or mint leaves
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar or lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and black pepper, to taste

Instructions

  1. In a large bowl, add the mixed greens as the base.
  2. Arrange the cherry tomatoes, cucumber, avocado, red onion, and fresh fruit evenly over the greens.
  3. Sprinkle crumbled feta cheese and toasted nuts across the top.
  4. In a small bowl or jar, whisk together the olive oil, balsamic vinegar or lemon juice, Dijon mustard, honey, salt, and pepper until emulsified.
  5. Drizzle the dressing over the salad just before serving and toss gently to combine.
  6. Garnish with fresh basil or mint leaves. Serve immediately and enjoy the fresh, seasonal flavors.
