Description

A comforting and delicious Turkey Mashed Potato Pie featuring layers of savory turkey filling and creamy sweet potato mash.


Ingredients

  • 1 pound sweet potatoes, peeled and diced into 1-inch cubes
  • 1 tablespoon kosher salt for boiling
  • 1/4 teaspoon kosher salt
  • 1/4 cup sour cream or full-fat plain yogurt
  • 2 1/2 cups chopped cooked turkey breast, skin removed (approximately 1 pound)
  • 1/2 tablespoon olive oil
  • 1 large shallot, chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh sage, chopped
  • 2 celery stalks, chopped
  • 4 ounces frozen peas and carrots
  • 2 2/3 cups turkey or chicken broth, divided
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper, or to taste
  • 2 tablespoons cornstarch

Instructions

  1. Place diced sweet potatoes into a medium saucepan. Cover with water, add 1 tablespoon kosher salt, and bring to a boil. Cook for 16 to 18 minutes until tender.
  2. Drain potatoes and return them to the saucepan. Add 1/4 teaspoon kosher salt and sour cream or yogurt. Mash thoroughly and keep covered.
  3. Preheat oven to 375°F and position the rack in the center.
  4. Heat olive oil in a large skillet over medium heat. Add chopped shallot, parsley, thyme, and sage. Cook until fragrant and softened, about 2 to 3 minutes.
  5. Add chopped celery and cook until softened, approximately 4 to 5 minutes.
  6. Incorporate frozen peas and carrots, chopped turkey, 2 cups of broth, 1/4 teaspoon kosher salt, and black pepper. Bring to a boil, then reduce heat to medium-low and simmer for 8 to 10 minutes, stirring occasionally.
  7. Mix remaining 2/3 cup broth with cornstarch until dissolved. Stir into the turkey mixture and cook over medium-low heat for 3 to 4 minutes until thickened.
  8. Transfer turkey filling to a deep 9×9-inch baking dish or four individual 8-ounce ramekins. Spread mashed sweet potatoes evenly on top.
  9. Place the assembled dish on a sheet pan and bake for 20 minutes until heated through. Finish under the broiler for 2 to 3 minutes to develop a golden crust.

Notes

  • This pie can be made ahead of time and stored in the refrigerator before baking.
  • For an extra kick, add a pinch of cayenne pepper to the turkey filling.
  • You can substitute leftover chicken for turkey if preferred.
