Ingredients
For the Smash Burgers:
2 lbs ground chuck (80/20 blend)
1 tbsp all-purpose rub
Salt, to taste
1 tbsp Worcestershire sauce
1 tbsp red pepper flakes (optional, for heat)
2 white onions, thinly sliced
Avocado oil, for cooking
1 pepper jack cheese, sliced
Burger buns, toasted
Mustard, for serving
For the Baconnaise Sauce:
1/2 cup mayo
1/2 lb bacon, cooked and finely chopped
2 tbsp ketchup
2 tbsp mustard
1 tbsp apple cider vinegar
1/2 lb crispy chopped bacon (for topping)
Instructions
1. Make the Baconnaise Sauce
Cook ½ lb bacon until crispy, then finely chop.
In a bowl, mix mayo, ketchup, mustard, apple cider vinegar, and chopped bacon.
Stir well and set aside in the fridge while you prepare the burgers.
2. Prepare the Smash Burgers
Divide the ground chuck into 8 equal balls (¼ lb each). Season with all-purpose rub and Worcestershire sauce.
Heat a cast-iron skillet or griddle over high heat with a bit of avocado oil.
Add sliced onions to the skillet and cook until caramelized.
3. Smash & Cook the Burgers
Place a meatball on the hot skillet and smash it down with a spatula until thin.
Cook for 2 minutes until crispy, then flip. Add pepper jack cheese and let it melt.
Repeat with the remaining patties.
4. Assemble the Burgers
Spread mustard on the toasted buns.
Place a cheesy smash patty, followed by caramelized onions.
Top with extra crispy bacon and a generous amount of baconnaise sauce.
Serve immediately with fries or a side salad.
Notes
Extra Crispy Patties: Press hard when smashing to get deep caramelization.
No Cast-Iron? Use a heavy-bottomed pan or griddle.
More Heat? Add hot sauce or extra red pepper flakes to the baconnaise.
