Description

A creative twist on Thanksgiving leftovers, these smash burger tacos combine ground turkey, crispy tortillas, and traditional stuffing, topped with cranberry sauce.


Ingredients

  • 1 pound ground turkey
  • 8 corn tortillas
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 cup shredded cheese, such as cheddar or Monterey Jack
  • 1 cup cooked stuffing, crumbled
  • 1/2 cup cranberry sauce

Instructions

  1. Divide ground turkey into 8 equal portions and roll each into a ball.
  2. Heat a large nonstick skillet or griddle over medium-high heat.
  3. Place a tortilla on the skillet, then immediately position a turkey ball in the center.
  4. Use a spatula or burger press to flatten the turkey ball evenly across the tortilla to the edges.
  5. Season the turkey with salt and pepper. Cook for 2 to 3 minutes until browned and cooked through on the bottom.
  6. Flip the tortilla so the turkey side faces down.
  7. Sprinkle a generous amount of shredded cheese and a spoonful of crumbled stuffing over the turkey.
  8. Continue to cook for 1 to 2 minutes, until cheese is melted and tortilla is crisp.
  9. Remove from skillet. Top each taco with a spoonful of cranberry sauce.
  10. Fold and serve immediately while hot.
