Description
A creative twist on Thanksgiving leftovers, these smash burger tacos combine ground turkey, crispy tortillas, and traditional stuffing, topped with cranberry sauce.

- 1 pound ground turkey
- 8 corn tortillas
- Salt, to taste
- Freshly ground black pepper, to taste
- 1 cup shredded cheese, such as cheddar or Monterey Jack
- 1 cup cooked stuffing, crumbled
- 1/2 cup cranberry sauce
Instructions
- Divide ground turkey into 8 equal portions and roll each into a ball.
- Heat a large nonstick skillet or griddle over medium-high heat.
- Place a tortilla on the skillet, then immediately position a turkey ball in the center.
- Use a spatula or burger press to flatten the turkey ball evenly across the tortilla to the edges.
- Season the turkey with salt and pepper. Cook for 2 to 3 minutes until browned and cooked through on the bottom.
- Flip the tortilla so the turkey side faces down.
- Sprinkle a generous amount of shredded cheese and a spoonful of crumbled stuffing over the turkey.
- Continue to cook for 1 to 2 minutes, until cheese is melted and tortilla is crisp.
- Remove from skillet. Top each taco with a spoonful of cranberry sauce.
- Fold and serve immediately while hot.
Notes
- Feel free to customize toppings based on your leftover goodies.
- For a spicier kick, add jalapeños or hot sauce.
