Ingredients
- 1 lb ground chicken or turkey (or beef)
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn kernels, drained
- 1 jar (16 oz) salsa
- 1 cup sour cream
- 2 cups shredded Mexican cheese blend
- 6 large flour tortillas
- 1 can (10 oz) diced tomatoes with green chilies (optional for extra spice)
- Fresh cilantro, chopped (for garnish)
- Sliced green onions (for garnish)
- Optional toppings: diced avocado, jalapeños, extra sour cream, or shredded lettuce
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Cook the Meat: In a large skillet over medium heat, cook the ground meat until browned and cooked through, about 5-7 minutes. Drain any excess fat, if necessary.
- Add Seasoning: Stir in the taco seasoning according to the packet instructions, then add the black beans, corn, and diced tomatoes (if using). Let the mixture simmer for 5 minutes.
- Layer the Lasagna: In a 9×13-inch baking dish, spread a small amount of salsa on the bottom to prevent sticking. Place two tortillas to cover the bottom of the dish. Spread a portion of the meat mixture over the tortillas, followed by a layer of sour cream and a sprinkle of shredded cheese. Repeat this layering process (tortillas, meat, sour cream, cheese) until all ingredients are used, finishing with a layer of cheese on top.
- Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and melted. Remove the foil for the last 5 minutes of baking to allow the cheese to lightly brown.
- Garnish and Serve: Remove from the oven and let the taco lasagna rest for 5 minutes before slicing. Garnish with fresh cilantro and green onions. Serve with your favorite toppings like avocado, jalapeños, or extra sour cream.
Notes
- Make sure to drain the beans and corn well to prevent excess moisture in the lasagna.
- You can substitute the ground meat with a plant-based alternative for a vegetarian version.
- Feel free to customize the toppings according to your preference.
