  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 jar (16 oz) salsa
  • 1 cup sour cream
  • 2 cups shredded Mexican cheese blend
  • 6 large flour tortillas
  • 1 can (10 oz) diced tomatoes with green chilies (optional for extra spice)
  • Fresh cilantro, chopped (for garnish)
  • Sliced green onions (for garnish)
  • Optional toppings: diced avocado, jalapeños, extra sour cream, or shredded lettuce

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Cook the Meat: In a large skillet over medium heat, cook the ground meat until browned and cooked through, about 5-7 minutes. Drain any excess fat, if necessary.
  3. Add Seasoning: Stir in the taco seasoning according to the packet instructions, then add the black beans, corn, and diced tomatoes (if using). Let the mixture simmer for 5 minutes.
  4. Layer the Lasagna: In a 9×13-inch baking dish, spread a small amount of salsa on the bottom to prevent sticking. Place two tortillas to cover the bottom of the dish. Spread a portion of the meat mixture over the tortillas, followed by a layer of sour cream and a sprinkle of shredded cheese. Repeat this layering process (tortillas, meat, sour cream, cheese) until all ingredients are used, finishing with a layer of cheese on top.
  5. Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and melted. Remove the foil for the last 5 minutes of baking to allow the cheese to lightly brown.
