A simple and delicious recipe for Sweet Potato Patties with an herb mayo dipping sauce.

- 1 teaspoon olive oil
- 1 large egg
- 0.5 teaspoon sea salt
- 0.25 teaspoon ground black pepper
- 0.5 teaspoon curry powder
- 0.5 teaspoon dried thyme
- 60 millilitres wheat flour
- 240 grams mashed sweet potato
- 1 tablespoon butter, melted
- 120 millilitres mayonnaise
- 1 teaspoon mixed dried herbs
Instructions
- Preheat oven to 200°C and line a baking sheet with parchment paper.
- In a medium bowl, whisk together egg, sea salt, black pepper, curry powder, mashed sweet potato, wheat flour, and dried thyme until well incorporated.
- Scoop six mounds of the mixture using a 60 millilitres scoop or 60 millilitres measuring cup onto the prepared baking sheet. Flatten the tops gently with a spatula.
- Brush patties with melted butter and bake for 15 minutes.
- Flip patties, brush with additional melted butter, and bake for another 10 minutes until browned and set.
- In a small bowl, mix mayonnaise with mixed dried herbs until smooth.
- Serve immediately, garnished with additional fresh herbs if desired, alongside the herb mayo sauce.
Notes
- Ensure sweet potatoes are well mashed for the best texture.
- Can substitute wheat flour with a gluten-free option for gluten-free version.
- Experiment with additional herbs in the mayo for more flavor.
