Description

A simple and delicious recipe for Sweet Potato Patties with an herb mayo dipping sauce.


Ingredients

  • 1 teaspoon olive oil
  • 1 large egg
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon ground black pepper
  • 0.5 teaspoon curry powder
  • 0.5 teaspoon dried thyme
  • 60 millilitres wheat flour
  • 240 grams mashed sweet potato
  • 1 tablespoon butter, melted
  • 120 millilitres mayonnaise
  • 1 teaspoon mixed dried herbs

Instructions

  1. Preheat oven to 200°C and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together egg, sea salt, black pepper, curry powder, mashed sweet potato, wheat flour, and dried thyme until well incorporated.
  3. Scoop six mounds of the mixture using a 60 millilitres scoop or 60 millilitres measuring cup onto the prepared baking sheet. Flatten the tops gently with a spatula.
  4. Brush patties with melted butter and bake for 15 minutes.
  5. Flip patties, brush with additional melted butter, and bake for another 10 minutes until browned and set.
  6. In a small bowl, mix mayonnaise with mixed dried herbs until smooth.
  7. Serve immediately, garnished with additional fresh herbs if desired, alongside the herb mayo sauce.

  • Ensure sweet potatoes are well mashed for the best texture.
  • Can substitute wheat flour with a gluten-free option for gluten-free version.
