- 1 lb pork tenderloin, cut into 1-inch pieces
- 2 tablespoons olive oil
- 1/2 cup diced jalapenos (seeds removed for less heat)
- 1/4 cup honey
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 tablespoon apple cider vinegar
- 1 tablespoon lime juice
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- In a large skillet, heat olive oil over medium-high heat.
- Add the pork pieces and season with salt and pepper. Cook until browned and cooked through, about 6-8 minutes. Remove from the skillet and set aside.
- In the same skillet, add the minced garlic and diced jalapenos. Sauté for 1-2 minutes until fragrant.
- Add the honey, soy sauce, apple cider vinegar, and lime juice. Stir to combine, bringing the sauce to a simmer for 3-4 minutes until it thickens.
- Return the cooked pork to the skillet and toss to coat in the jalapeno glaze. Let it simmer for an additional 2-3 minutes to absorb the flavors.
- Remove from heat and garnish with chopped cilantro before serving.
Notes
- For a spicier dish, keep the seeds in the jalapenos.
- Serve with rice or tortillas for a complete meal.
