Description

Sweet Chili Pineapple Shrimp is a delightful dish that combines succulent shrimp with the sweetness of pineapple and a kick from chili sauce.

Ingredients

Scale
  • 1 pound of large shrimp, peeled and deveined
  • 1 cup of fresh pineapple, cut into bite-sized chunks
  • 1/2 cup of sweet chili sauce
  • 2 tablespoons of soy sauce
  • 1 tablespoon of olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of ginger, grated
  • Salt and pepper to taste

Instructions

  1. Marinate the Shrimp: Combine the shrimp, sweet chili sauce, soy sauce, minced garlic, and grated ginger in a bowl. Cover and let it marinate in the fridge for 15-30 minutes.
  2. Prepare the Pineapple: If using fresh pineapple, cut it into bite-sized chunks; if canned, drain it well.
  3. Cook the Shrimp: Heat olive oil in a skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side until pink and opaque.
  4. Combine Ingredients: Add the pineapple chunks to the skillet and stir gently. Cook for an additional 2-3 minutes until the pineapple warms up.
